Rich Fruit Cake


It's christmas time I just tried a small rich fruit cake. It turned out well , so I am going to prepare a bigger cake for christmas.






Ingredients

Maida - 1/2 cup
Butter - 1/2 cup
Sugar - 1/2 cup + 5 Teaspoons
Baking powder - 1/2 Teaspoon
Spice powder - 1/4 Teaspoon
Mixed Fruits - 1 cup
Orange Juice - 1/2 cup
Rum Essence - 1/2 Teaspoon
Cashew nuts - a handful
Egg - 1
Salt - a pinch


Method

1. Heat a pan and put 5 teaspoons of sugar and 1 teaspoon of water and heat in
medium heat. When the sugar turns dark brown, remove from the fire and slowly add 1/4 cup of water. put it in low fire and stir well until it becomes a sticky liquid. Cool it completely.
2. Soak the mixed fruits and cashew nuts in orange juice for 2 hours. Then drain the juice and toss it with a spoon of flour.
3. Beat butter and sugar together. Add egg into it and mix with electric beater.
4. Sieve together maida, baking powder, salt and spice powder.
5. With a wooden spatula , slowly mix flour into the butter egg mixture.
6. Fold in mixed fruits.
7. Add rum essence and pour into the greased tray. Preheat the oven in 150 C. put the cake tray into the hot oven and let it cook for 50 mins.
